Perfect for searing almost any cut of meat or putting a char on some vegetables - Vogue

Why It Made the List

These traditionally forged, heritage pans are something special. Their bases are made of silky-smooth, spun carbon steel, whilst the handles are hand-forged by master blacksmiths in Alex Pole's celebrated Somerset forge. Handsome copper rivets join the two, resulting in a truly awesome piece of handmade cookware. Their construction makes them naturally non-stick,, with no chemical coating, and they're pre-seasoned and ready to use straight out of the box. Carbon steel heats quickly and uniformly, making them ideal for searing, grilling, frying, simmering or sautéing. They're safe to use on hobs, grills, ovens or open fires and come with an incredible 100-year guarantee. If they break they'll be fixed or replaced, for free, for a century.

MORE DETAIL

These heritage frying pans are signature pieces in Alex Pole's hand-forged cookware range. A testament to the craftsmanship involved, they really are an exceptional addition to any kitchen; handsome, robust and reassuringly heavy in the hand, with an attractive blue sheen rendered by their high carbon content.

Spun carbon steel is uniquely thinner and lighter than traditional carbon steel or cast iron cookware, yet delivers the same outstanding searing power and durability. It heats up quickly and uniformly, with high levels of retention, which makes it perfect for browning meat, seafood or vegetables.

That premium quality steel mean the pans will develop an attractive natural patina over time. This not only makes them even easier to cook with, but also offers a safe, sustainable alternative to conventional non-stick options. Arriving pre-seasoned with rapeseed oil, they're ready for immediate use; however, we suggest seasoning a little yourself to accelerate the easy-release process. For guidance on maintaining and seasoning your carbon steel pan, a comprehensive guide is available for your convenience.

The frying pan's handle, made from hand-forged stainless steel, remains cool during cooking, rendering it comfortable and safe to hold. Two shiny copper rivets secure the handle and add a touch of elegance, blending their utility with a distinctly handmade aesthetic. The pans are compatible with any cooking surface, including all hob types, ovens, grills, barbecues and open-flame, so flexibly practical for any cooking environment.

It is worth pointing out that such high quality pans needs to be looked after to ensure they perform and last, as they would in a professional kitchen. They should be hand-washed (no dishwashers) and dried before storage, and detergents should be avoided to help them build that natural non-stick patina. In general they should be heated slowly and this advice applies especially in the case of powerful induction hobs, that can warp steel if used carelessly. The pans are incredibly robust however and as Alex says himself, "if you look after it well there’s no reason it won’t last a hundred years. Take care of it and you’ll be able to pass it down the generations."

In that respect, Alex puts his money where his mouth is. Every pan the company make is backed by an incredible 100-year "more than a lifetime" guarantee. As long as the fault is theirs in any way (i.e. you haven't left it out in the garden all year) and has come from an issue occurring in The Forge, they will endeavour to repair your item for you. If it is beyond repair it will be replaced, for free, for a century. Whilst you might not be around to take them up on that guarantee, it shows how confident Alex is in the design, materials and craftsmanship employed in these incredible heirloom-grade pans.
