Why It Made The List

Since their initial introduction to The List, we've carefully added Veark models to the lineup, as each continues to demonstrate head-turning aesthetics and impeccable design integrity. The SK15 is no different. A Danish take on the traditional Japanese Santoku, these conversation-starting all-rounders will do 80% of the work in most kitchens. They're crafted in Solingen, a German town famous for knife-making for over 500 years, and the drop-forging process means no pesky joints encouraging dirt and breakage. It also produces a different and distinct patterning on every handle, rendering each one completely unique.

The SK15 is part of Veark's fully forged collection, made from a single piece of steel by experienced craftsmen in the historic knife-making town of Solingen, Germany. The town is so well known for knife-forging that like Champagne, Chianti or Parma ham, use of its name is protected; an effective trademark that ensures quality and origination standards are upheld.

The SK15 is Veark's take on the traditional Japanese Santoku, translated as "three benefits," referring to the shape's flexibility in slicing, dicing and mincing; the vast majority of knife work required in any kitchen. Their length is accessible enough for the most inexperienced of cooks, whilst that subtle rocker (curve) on their edge allows professional chefs to work more quickly.

With drop-forging, each knife is crafted using a single piece of stainless steel. The design removes the need for joints, making the knives more hygenic, easier to clean and exceptionally durable, with less chance of breakage where the blade would normally meet the handle.

The SK15's blade is 15cm long, sharpened by hand to just below 30° (both sides combined) and as with all Veark's forged knives, is fully symmetrical, so suitable for left or right-handed users. (For sharpening tools that can be adjusted, set the angle to 28° for the best result (14° per side).)

Veark studied how professional chefs hold their knives when developing the open handle: an award-winning wrench-inspired design that invites you to slide your thumb onto the blade and grab it right at the balancing point. This adds stability and a firm, more precise grip, as well as looking great in your kitchen knife rack.

Sharpness and durability are key considerations for Veark's designs. The typical Solingen knife has a hardness rating of 55-56 Rockwell. The SK15 achieves 58 Rockwell, which means improved sharpness and greater longevity.

As a final aesthetic flourish, the drop forging process leaves each knife with an individual pattern on the handle. A beautiful detail that makes each piece unique, while serving as a reminder of the expert, handmade nature of its forging.
