The Dele takes its name from the Norwegian word for sharing; a fitting choice for a knife created to move comfortably between the home kitchen and the outdoors.

It's the first chef’s knife released by Helle in around sixty years and balances that heritage with a deliberately modern, versatile shape.

Its blade is made from Alleima 12C27 stainless steel, hardened to 59–61 HRC and polished to a clean, sharp edge.

The profile blends elements of a classic European chef’s knife and a Santoku, giving it the reach for larger tasks and the control needed for finer work.

At 160 mm long, 37 mm tall and 3 mm thick, the blade feels confident without being unwieldy, supported by the strength and balance of full tang construction.

The handle is shaped from curly birch with vulcanised fibre liners, echoing the rounded comfort of Helle’s outdoor knives.

Each handle carries its own natural grain pattern and is finished by hand for a warm, tactile feel that sits securely in the palm. At 115 mm long, it gives ample purchase whether slicing vegetables in a kitchen or preparing ingredients by a campfire.

A leather blade protector is included for storage or travel, and the complete set weighs 205 g.

Designed in 2023, the Dele embodies Helle’s long tradition of honest materials and practical craft, offering a knife that feels equally at home indoors or under open sky.
