Experts Say

Allday’s Santoku has been one of our favourite British knives for a while now...this broad, sturdy, flat-topped razor cuts like a force of nature - The Telegraph

Why It Made The List

Allday Goods are true LOG favourites. Their high-quality, carbon-steel blades are handmade in Japan, whilst their exceptional handles are fashioned from 100% recycled waste plastic. These Santokus are their original all-rounders. Light, well-balanced and comfortable in the hand, their edges are incredibly sharp and that slight rocker makes them perfect for the vast majority of kitchen tasks. Design, workmanship, finish and packaging are all impeccable—undoubtedly why they've featured in GQ, Esquire, Wallpaper and Hypebeast (to name an enlightened few).

THE DETAIL

Allday Goods combine professional-grade blades with handles fashioned from 100% waste plastic, making beautiful, sustainable tools to be used every day.

These Santokus are the Japanese equivalent of the Western chef's knife. Translated as "three benefits," the Santoku is perfectly suited for slicing, dicing and mincing; the vast majority of knife work required in any kitchen. Their length is accessible enough for the most inexperienced of cooks, whilst that subtle rocker (curve) on their edge allows the professional chef to work more quickly.

The blades are hand-forged by Goto in Seki, Japan, a region known globally for its history and experience in producing fine kitchen knives. They're fashioned from incredibly hard (65 HRC) SK4 carbon steel, which keeps a razor-sharp edge, but should be cared for appropriately to ensure they work to their full potential. Instructions on how to look after them are included in the box.

The magic though, is in the handling. Waste plastic is collected, washed, shredded, melted and formed into those ergonomic, octagonal handles. The waste source is always changing depending on what's collected, so there can be slight variations in colour. That means no two handles will ever be the same–every one is completely unique.

The knives come in attractive presentation boxes, each containing a "meet the maker" card, limited edition sticker, care instructions and a penny to ward off bad luck.
